What they say about themselves in the Gric Restaurant Slovenia

Local, Traditional and Green

Following the twists and turns over the hills and plains surrounding Polhov Gradec, you arrive at Šentjošt nad Horjulom, a village chef Luka Košir calls home. While the story of Grič has borne his signature since 2009, the plot writes itself with its uniqueness emerging from the immediate surroundings: from the forest slopes to vast meadows, from gardens and fields, from its excellent ingredients and produce by devoted local growers.

At Grič, we are humbled by our sincerest bond with nature, while our team transforms its greatest gifts into genuine dishes with unwavering dedication.

To the table

Loving – Devoted – Green

What has sprung in our garden today? What did we carefully store in the mason jars, what did we put on our cellar’s shelves and which ingredients have finally matured to perfection? The answers lay with our tasting menus with wine or non-alcoholic pairing.

Food and Wine

One of the advantages of Šentjošt is that it offers tranquillity – to its guests and its chef. To our chef, his family and friends, the surrounding natural environment has become a daily companion. We wait for the perfect moment to collect the birch water and spend our mornings discovering the hidden mushroom-picking sites. We watch the ducks chase each other and marvel at Koligar’s mastery of handling fish. We savour the aroma of fresh cheese at Orešnik’s and peek curiously at the jars in the fermentation room. The philosophy accompanying our plates adapts to the cycles of nature, only now and then allowing us to cheat its seasons by choosing the preserves from our cellar.

Inspired by nature

Apart from following the premise of feeling inspired by nature’s offerings, it is not always easy to explain why and how the chosen ingredients found their way onto our guests’ plates – though the flavour combinations invariably reflect chef Luka’s vision.

We thrive in presenting our ideas that found their way to our two tasting menus that are updated daily, depending on the chef’s current inspiration and available ingredients.

If you want to know more, we will gladly explain it! Perhaps over a glass of fine wine from our admirable collection, or some homemade tea, june juices or other homemade non-alcoholic concoctions. How does that sound?

MICHELIN Guide’s Point Of View for Gric Restaurant in Slovenia

Access to Luka Košir’s house and restaurant is via roads that wind their way through rolling hills dotted with small villages, through verdant landscapes that seem to reflect the restaurants “green” approach to cuisine. The same beautiful views can be enjoyed from the new veranda-style dining room, while fans of fancy culinary techniques will prefer a table facing the brand-new kitchen where they can watch the chefs at work. Here, the owner-chef presents his own seasonal, rural and creative vision of Slovenia via two surprise tasting menus described in terms of the duration of the meal (2hr 30 and 4hr respectively), rather than the number of courses. Dishes change daily depending on market availability and always feature top-quality ingredients full of flavour, including vegetables from the restaurant’s own kitchen gardens and eggs and meat (in season) from their own ducks. Fish from the not-so-distant Upper Adriatic also makes an appearance, sourced from three trusted fishing boats. The choice of wines by the glass allows for truly original pairings, in which wine and food complement each other to perfection. A non-alcoholic pairing option with tea, juices and home-made drinks is also available.

“From the veranda windows at this restaurant, you can see some of the vegetable plots and greenhouses that have been cultivated for many years by chef Luka’s father Hinko, who composts leftovers to make fertiliser and collects rainwater for irrigation. The menu starts here, inspired by the restaurant’s own home-grown fruit and vegetables, which are then supplemented by top-quality ingredients produced nearby, especially meat sourced from local farmers and hunters (who are listed on the menu as a sign of friendship and respect). Duck on the menu is sourced from the restaurant’s own ducks, while fish comes from local rivers or the Upper Adriatic.”

— Luka Košir
